Baking, Baking, and more baking...

I will admit that two weeks ago I was pretty disappointed when my baking day fell through the cracks. Then as the days passed I thought well, no big deal - it was less mess without all the baking. However, I kept thinking how awesome it would be to make cake balls at least once. So yesterday I called up my good friend, Avie. I started the call out with asking what she was making for breakfast on Christmas morning, because of course I need ideas this year. She is doing breakfast casserole muffins. I am still undecided, but I am leaning more and more toward cinnamon rolls. After discussing this for a few minutes, I gradually started talking about cake balls and baking. It worked out perfectly, because last night we went to the store together and bought everything we needed to bake today. We took a ton of pictures of the whole process.

Here is what you need for Cake Balls:
Pour cake mix into the large bowl:
Add water and oil:
Add 3 larger eggs:
Mix together until smooth:
Pour into baking dish:
Bake for 35 minutes and take out to cool for 15 minutes:
Crumb cake into large bowl:
Mix in frosting with crumbed cake:
Place in freezer for about 25 minutes:
Take crumbed cake out of the freezer and make into balls:
Place balls back into the freezer for about 3 hours:
Take out and cover with melted chocolate:

We actually made two different types of cake balls. We made the one above with strawberry cake mix, vanilla whipped frosting, and white chocolate coating. Then we made yellow cake mix, chocolate whipped frosting, and chocolate coating. The possibilities with cake balls seem to be endless!

Tomorrow, I will post the other foods we baked, such as, no bakes, Christmas Crack, peanut butter balls, muddy buddies (aka white trash).

The kids did so wonderful while we baked. The two older boys played the Wii together without too much fighting! Colin hung out in the kitchen with us and baked! He even wore his oven mitt.
He had so much fun today even though he was a little worried about Avie's mom trying to take him. For about twenty minutes he followed me around the kitchen and hung on to my leg. It is amazing how different my two boys are. When Cade was that age he was always so happy to meet new people. He would just go right to them, but Colin, NO WAY! He doesn't really like meeting new people and he takes a while to warm up to them. He is so funny though once he gets to know them. Today, he was dancing around the kitchen once he warmed up to Ms. Jo!
